Can I post a document that was written in Chinese or Arabic? If so, how? I tried once just pasting it into the post field and it would never publish. Thanks.

Our blogs should be able to support the use of international character sets. I have posted in Japanese and have seen blogs using Arabic. I would suggest turning off the rich text editor if you are having any problems using extended character sets...
