Is there a way to turn off the 'Excerpt' feature? I don't use it and sometimes forget to uncheck the box enabling it. And going back to edit the post, there's no way to remove it short of deleting the post and recreating it.

You can turn off the option to Auto-generate excerpts from the control panel; click on the Settings tab then its Posting Defaults sub-tab. On the right side of the page you will see Options, uncheck Auto-generate excerpts and click on the Save Settings button at the bottom of the page.

You don't have to delete the post and recreate it: from the Edit Article page just delete the contents of the Excerpt box and click the Save button.
